  • 1 pound bacon diced and cooked until crisp

  • ½ small red onion diced small
  • 2 stalks celery diced
  • ½ cup mayonnaise
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper

Method
 

  1. Step 1: Prep Your Stars: Grab your largest mixing bowl. Into it, combine your chopped cooked chicken, crispy bacon bits, vibrant halved cherry tomatoes, finely diced red onion, and crunchy diced celery.
  2. Step 2: Whip Up the Dressing: In a separate, smaller bowl, whisk together the mayonnaise, fresh lemon juice, salt, garlic powder, onion powder, and black pepper until smooth and perfectly blended. Taste and adjust seasonings as desired.
  3. Step 3: Combine & Coat: Gently pour the dressing over all the salad ingredients in your large bowl. With a spatula or a large spoon, give everything a good, thorough stir until every piece is beautifully coated in the luscious dressing. Do not overmix.
  4. Step 4: Serve & Savor: This salad is fantastic on its own for a light lunch, but you can also serve it in crisp lettuce cups, on toasted bread for a more traditional sandwich experience, or alongside a simple, fresh side. For best flavor, letting it chill for about 15-30 minutes helps the flavors meld.

Notes

This versatile salad can be customized with various additions like fresh greens (romaine, spinach), herbs (chives, dill, parsley), diced avocado, a pinch of red pepper flakes or hot sauce for a kick, or extra crunch from toasted croutons, sunflower seeds, or crushed potato chips. A sprinkle of shredded cheddar or crumbled blue cheese can also be surprisingly delicious. You can also use cooked turkey or flaky white fish instead of chicken. For truly crispy bacon, bake it on a sheet pan at 400°F (200°C) for 15-20 minutes. Ensure cooked chicken is completely cooled before mixing. Aim for uniformly diced ingredients for balanced flavors. Always season to taste. Store leftovers in an airtight container in the refrigerator for 3 to 5 days. If adding delicate greens like lettuce, do so just before serving each portion to prevent wilting.
