Method
- Step 1: Preheat oven to 375°F (190°C). Lightly grease a baking sheet or line with parchment paper.
- Step 2: In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, salt, cinnamon, and nutmeg until evenly distributed.
- Step 3: In a separate small bowl, whisk together the wet ingredients: milk, eggs, vanilla extract, and melted butter until smooth.
- Step 4: Pour the wet ingredients into the dry ingredients. Stir them together until just combined. A few lumps are okay; avoid overmixing to ensure tender fritters.
- Step 5: Gently fold in the diced apples, ensuring they are well-distributed throughout the batter.
- Step 6: Using a spoon or an ice cream scoop, drop spoonfuls of batter onto the prepared baking sheet, leaving about 2 inches of space between each fritter.
- Step 7: Bake for 15-18 minutes, or until the fritters are beautifully golden brown and a toothpick inserted into the center comes out clean.
- Step 8: While the fritters are baking, prepare the glaze: In a small bowl, mix together the powdered sugar, milk, and vanilla extract until you have a smooth, pourable consistency. Adjust with more milk or powdered sugar if needed.
- Step 9: As soon as the fritters come out of the oven, while they're still wonderfully warm, drizzle the luscious glaze all over them. Serve immediately and enjoy!
Notes
Substitutions & Additions: Experiment with other fruits like diced pears, peaches, or mixed berries. Enhance spices with a pinch of ground ginger, cardamom, or pumpkin pie spice. For added crunch, fold in chopped walnuts or pecans. Vary the glaze by using apple cider or maple syrup instead of milk, or drizzle with caramel sauce. Mini chocolate chips can also be folded into the batter.
Tips for Success: Do not overmix the batter to avoid tough fritters; lumps are fine. Use firm, slightly tart apples such as Granny Smith, Honeycrisp, Gala, or Fuji for best texture. Dice apples into small, consistent pieces (1/4 to 1/2 inch) for even cooking. Always glaze the fritters while they are warm to ensure the glaze melts and soaks in for an irresistible coating. Dry ingredients can be whisked together and stored overnight for partial prep ahead.
How to Store: Store any leftover fritters in an airtight container at room temperature for 2-3 days. Reheat in the microwave for 10-15 seconds, or in a preheated oven (or air fryer) at 300°F (150°C) for 5-7 minutes for a crispier exterior. To freeze, let cool completely, then freeze in a single layer on a baking sheet until solid. Transfer to a freezer-safe bag for up to 1-2 months. Thaw at room temperature and reheat as desired.
