- Step 1: Grab a medium bowl and toss in your shredded cooked chicken. Pour in that ½ cup of Caesar dressing. Give it a good stir until every bit of chicken is nicely coated.
- Step 2: Heat up your skillet over medium heat. Add the olive oil. Once it’s shimmering, add your dressed chicken mixture. Stir it around for about 3-5 minutes, just heating it through.
- Step 3: While the chicken is warming, slice your large croissants in half horizontally. Lightly spread unsalted butter on the inside cut side of each croissant half.
- Step 4: Place the buttery side down directly onto your warm skillet. Let them toast for about 2 minutes, or until beautifully golden brown and slightly crispy. Take them off the heat.
- Step 5: On the bottom half of each warm, toasted croissant, layer a nice pile of that chopped Romaine lettuce.
- Step 6: Spoon that warm, dressed chicken mixture generously over the lettuce.
- Step 7: Sprinkle that lovely, freshly grated Parmesan cheese right over the chicken.
- Step 8: Add those little cherry tomato halves on top.
- Step 9: Finish it off with a little sprinkle of salt and pepper to taste, if needed.
- Step 10: Place the top half of the croissant over your beautiful filling.
- Step 11: Serve these up immediately while they're still warm and the croissant is perfectly toasty.
Notes
Substitutions & Additions: Swap chicken for grilled chicken, cooked turkey, roasted chickpeas, or grilled halloumi. Try feta or sharp white cheddar cheese. Add crispy bacon bits or crumbled croutons for crunch. Boost veggies with sliced red onion, cucumber, or roasted red peppers. Add avocado for extra creaminess. Butter lettuce or baby spinach can replace Romaine.
Tips for Success: Don't overcook the chicken mixture; just warm it through. Taste the dressing/chicken mixture for seasoning before adding to the sandwich. Watch croissants closely while toasting on medium heat to prevent burning. Using freshly grated Parmesan and fresh romaine improves flavor and texture. Prep components ahead (chicken, lettuce, tomatoes) and store separately; assemble just before serving.
