  • 2 large croissants halved
  • 1 cup cooked chicken breast shredded
  • 0.5 cup Caesar dressing
  • 0.25 cup freshly grated Parmesan cheese
  • 1 cup Romaine lettuce chopped
  • 8 cherry tomatoes halved
  • Salt to taste
  • Pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter

Method
 

  1. Step 1: Grab a medium bowl and toss in your shredded cooked chicken. Pour in that ½ cup of Caesar dressing. Give it a good stir until every bit of chicken is nicely coated.
  2. Step 2: Heat up your skillet over medium heat. Add the olive oil. Once it’s shimmering, add your dressed chicken mixture. Stir it around for about 3-5 minutes, just heating it through.
  3. Step 3: While the chicken is warming, slice your large croissants in half horizontally. Lightly spread unsalted butter on the inside cut side of each croissant half.
  4. Step 4: Place the buttery side down directly onto your warm skillet. Let them toast for about 2 minutes, or until beautifully golden brown and slightly crispy. Take them off the heat.
  5. Step 5: On the bottom half of each warm, toasted croissant, layer a nice pile of that chopped Romaine lettuce.
  6. Step 6: Spoon that warm, dressed chicken mixture generously over the lettuce.
  7. Step 7: Sprinkle that lovely, freshly grated Parmesan cheese right over the chicken.
  8. Step 8: Add those little cherry tomato halves on top.
  9. Step 9: Finish it off with a little sprinkle of salt and pepper to taste, if needed.
  10. Step 10: Place the top half of the croissant over your beautiful filling.
  11. Step 11: Serve these up immediately while they're still warm and the croissant is perfectly toasty.
