  • 0.5 tsp baking powder Works with the baking soda for a perfect texture.
  • 0.5 tsp salt Enhances all the flavors.
  • 1 tsp ground cinnamon A warm spice that pairs perfectly with zucchini.
  • 0.5 cup chopped walnuts optional, for a delightful crunch.
  • 0.5 cup raisins optional, adds a touch of sweetness.

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper to make it easy to remove later.
  2. Step 2: In a large bowl, combine the grated zucchini, sugar, and oil. Mix well until it's all blended together.
  3. Step 3: Beat in the eggs and vanilla extract until fully incorporated.
  4. Step 4: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  5. Step 5: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix; a few lumps are okay!
  6. Step 6: If desired, fold in the walnuts and raisins for that extra texture and flavor.
  7. Step 7: Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Notes

Make sure to squeeze out excess moisture from the grated zucchini for a better texture. Wrap it tightly in plastic wrap or aluminum foil and store it at room temperature for up to 3 days.
