- Step 1: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper to make it easy to remove later.
- Step 2: In a large bowl, combine the grated zucchini, sugar, and oil. Mix well until it's all blended together.
- Step 3: Beat in the eggs and vanilla extract until fully incorporated.
- Step 4: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Step 5: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix; a few lumps are okay!
- Step 6: If desired, fold in the walnuts and raisins for that extra texture and flavor.
- Step 7: Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Step 8: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Step 9: Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Make sure to squeeze out excess moisture from the grated zucchini for a better texture. Wrap it tightly in plastic wrap or aluminum foil and store it at room temperature for up to 3 days.
