- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: In a large mixing bowl, combine the sliced peaches, granulated sugar, lemon juice, vanilla extract, and ground cinnamon. Toss gently until well coated. Transfer to a greased 9x13 inch baking dish.
- Step 3: In another bowl, mix together the rolled oats, flour, brown sugar, chopped pecans, salt, and ground cinnamon. Pour in the melted butter and stir until crumbly.
- Step 4: Evenly sprinkle the crisp topping over the peach filling in the baking dish.
- Step 5: Bake for about 30-35 minutes, or until the topping is golden brown and the peach filling is bubbling.
- Step 6: Let cool for a few minutes before serving. It's delicious on its own or with vanilla ice cream.
